Ingredients
- 1 pound boneless, skinless chicken thighs
- 1/4 cup hot honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili flakes (adjust to taste)
- 2 cups cooked jasmine rice
- 1 small red bell pepper, thinly sliced
- 1 cup steamed broccoli florets
- Salt and pepper to taste
- 2 green onions, sliced for garnish
- 1 tablespoon sesame seeds for garnish
If you’re feeling adventurous, substitute the jasmine rice with quinoa or brown rice for a nuttier flavor. And don’t hesitate to swap broccoli with your favorite greens, perhaps kale or green beans, to keep things fresh and exciting.
Instructions
- Begin by marinating the chicken thighs. In a large bowl, combine the hot honey, soy sauce, olive oil, minced garlic, smoked paprika, chili flakes, and a pinch of salt and pepper. Toss the chicken thighs in the marinade until well coated. Let them sit for at least 30 minutes to absorb all those delicious flavors.
- While the chicken marinates, prepare your jasmine rice according to package instructions. I personally like to add a pinch of salt and a teaspoon of olive oil to the water for extra flavor.
- After marinating, heat a large skillet over medium-high heat. Add the chicken thighs and cook for about 5-6 minutes on each side, or until they are caramelized and cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
- In the same skillet, add the sliced red bell pepper and sauté for about 3-4 minutes until they start to soften. Add the steamed broccoli florets and stir everything together for another 2 minutes.
- To assemble the bowls, divide the cooked rice among four bowls. Top with sliced chicken, sautéed vegetables, and drizzle any leftover sauce from the pan over the top.
- Garnish with sliced green onions and sesame seeds for an added crunch and a hint of freshness.
