Ingredients

  • 1 pound boneless, skinless chicken thighs

  • 1/2 teaspoon chili flakes (adjust to taste)
  • 2 cups cooked jasmine rice
  • 1 small red bell pepper, thinly sliced
  • 1 cup steamed broccoli florets
  • Salt and pepper to taste
  • 2 green onions, sliced for garnish
  • 1 tablespoon sesame seeds for garnish

If you’re feeling adventurous, substitute the jasmine rice with quinoa or brown rice for a nuttier flavor. And don’t hesitate to swap broccoli with your favorite greens, perhaps kale or green beans, to keep things fresh and exciting.

Instructions

  1. Begin by marinating the chicken thighs. In a large bowl, combine the hot honey, soy sauce, olive oil, minced garlic, smoked paprika, chili flakes, and a pinch of salt and pepper. Toss the chicken thighs in the marinade until well coated. Let them sit for at least 30 minutes to absorb all those delicious flavors.
  2. While the chicken marinates, prepare your jasmine rice according to package instructions. I personally like to add a pinch of salt and a teaspoon of olive oil to the water for extra flavor.
  3. After marinating, heat a large skillet over medium-high heat. Add the chicken thighs and cook for about 5-6 minutes on each side, or until they are caramelized and cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing.
  4. In the same skillet, add the sliced red bell pepper and sauté for about 3-4 minutes until they start to soften. Add the steamed broccoli florets and stir everything together for another 2 minutes.
  5. To assemble the bowls, divide the cooked rice among four bowls. Top with sliced chicken, sautéed vegetables, and drizzle any leftover sauce from the pan over the top.
  6. Garnish with sliced green onions and sesame seeds for an added crunch and a hint of freshness.
