Instructions
- In a large mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Mix until smooth and creamy, about 3 minutes. This step always reminds me of the time my siblings and I would take turns licking the beaters after making cheesecake filling.
- Fold in the graham cracker crumbs until well combined. Cover the mixture and refrigerate for at least 30 minutes to firm up.
- Once chilled, scoop small portions of the mixture and roll them into 1-inch balls. Place them on a parchment-lined baking sheet.
- In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
- Dip each cheesecake ball into the melted chocolate, ensuring it’s fully coated. Return them to the parchment-lined sheet.
