Learn how to make delicious Italian grinder sandwich. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 Italian loaf or baguette, sliced lengthwise
  • 4 ounces of deli-sliced salami
  • 4 ounces of deli-sliced capicola
  • 4 ounces of deli-sliced mortadella
  • 4 ounces of deli-sliced provolone cheese
  • 1 cup of shredded lettuce
  • 1 tomato, thinly sliced
  • 1/4 cup of sliced red onion
  • 1/4 cup of sliced pepperoncini
  • 2 tablespoons of olive oil
  • 1 tablespoon of red wine vinegar
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste

If you can’t find capicola, feel free to substitute it with ham or even turkey for a slightly different yet still delicious flavor. The beauty of cooking is in its flexibility, a lesson I learned from my abuela as we adjusted recipes based on what we had available.

Instructions

  1. Preheat your oven to 375°F. This will help crisp up the bread and melt the cheese slightly, enhancing the sandwich’s texture and flavor.
  2. Slice the Italian loaf or baguette lengthwise, but don’t cut it all the way through. This creates a pocket to hold all the delicious fillings.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper. This dressing will add a zesty kick that ties everything together.
  4. Brush the inside of the bread with the dressing, ensuring an even coating for maximum flavor.
  5. Layer the salami, capicola, mortadella, and provolone cheese inside the bread. I like to alternate the meats and cheese to ensure every bite is balanced.
  6. Add the shredded lettuce, tomato slices, red onion, and pepperoncini on top of the meats and cheese. These fresh ingredients bring a delightful crunch and brightness to the sandwich.
  7. Wrap the sandwich in aluminum foil and place it in the oven for about 10 minutes, or until the cheese starts to melt. This step is optional but enhances the flavors and melds the ingredients beautifully.
  8. Remove from the oven, slice into portions, and serve warm or at room temperature.

When I first tried this technique of warming the sandwich, it reminded me of the way my grandmother would toast our tortas, filling the kitchen with mouthwatering aromas that signaled a meal made with love.
