Ingredients

  • 4 Italian sausage links (mild or spicy, based on preference)
  • 4 hoagie rolls
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2 bell peppers (any color), thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup marinara sauce (optional)
  • 1 cup shredded mozzarella cheese (optional)

Substitutions are your friend here. If you’re missing bell peppers, try zucchini or mushrooms. And if you’re out of mozzarella, provolone or even cheddar can add a different twist.

Instructions

  1. Preheat your oven to 375°F (190°C). While the oven warms up, heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the sausage links to the skillet, cooking until they are browned on all sides, about 8-10 minutes. Remove the sausages from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Toss in the sliced onions and bell peppers, sautéing them until they are soft and caramelized, about 7-10 minutes.
  4. Add the minced garlic, oregano, basil, salt, and pepper to the vegetable mixture, stirring for an additional 1-2 minutes until fragrant.
  5. Slice the hoagie rolls lengthwise, but not all the way through, and place them on a baking sheet lined with parchment paper.
  6. Place a sausage link inside each roll, topping with the sautéed vegetables. If using marinara sauce and cheese, spoon a bit of sauce over each sausage and sprinkle with cheese.
  7. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool slightly before serving. Enjoy your homemade Italian Sausage Hoagies!
