Ingredients
- 2 cups cooked chicken breast, shredded (rotisserie chicken works great)
- 1 cup cottage cheese
- 1/2 cup Greek yogurt
- 1/2 cup cheddar cheese, shredded
- 1/4 cup jalapenos, finely chopped (adjust to taste)
- 1/4 cup red onion, finely chopped
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Feel free to substitute Greek yogurt with sour cream for a tangier taste, or use a mix of different cheeses to suit your flavor preferences. The beauty of this salad is in its adaptability to whatever you have on hand.
Instructions
- In a large mixing bowl, combine the shredded chicken, cottage cheese, and Greek yogurt. Stir until well blended.
- Add the cheddar cheese, chopped jalapenos, and red onion to the bowl. Mix until all ingredients are evenly distributed.
- Squeeze in the lime juice and sprinkle the garlic powder, salt, and pepper over the mixture. Stir to combine.
- Taste and adjust seasoning if necessary. If you like more heat, consider adding extra jalapenos.
- Once everything is mixed, transfer the salad to a serving dish and garnish with fresh cilantro if desired.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together beautifully.
Growing up, I learned from my abuela that letting a dish rest can enhance its flavors, just like her famous sopa de fideo. This salad is no different — a little patience goes a long way.
