Instructions
- Begin by preheating your oven to 375°F. This will ensure your chicken finishes cooking evenly after searing.
- In a small saucepan, combine the diced peaches, chopped jalapeños, honey, soy sauce, and apple cider vinegar. Bring the mixture to a simmer over medium heat, stirring occasionally, until it thickens slightly, about 5-7 minutes.
- Meanwhile, season the chicken breasts with garlic powder, salt, and pepper.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side, until golden brown.
- Pour the jalapeño peach glaze over the chicken breasts, ensuring they are well-coated.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
