- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 3 large apples, peeled, cored, and thinly sliced
- Optional: 1/4 cup chopped walnuts or pecans
Feel free to swap out the buttermilk with a mixture of milk and a tablespoon of lemon juice if needed. For a nut-free version, simply omit the walnuts or pecans.
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- In a large bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk together the melted butter, eggs, vanilla extract, and buttermilk until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; the batter should be slightly lumpy.
- Gently fold in the apple slices and optional nuts, if using. My abuela always said the secret to a good cake is a gentle hand.
- Pour the batter into the prepared pan, spreading it evenly with a spatula.
- Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. The top should be golden brown, and the kitchen will smell like a warm hug.
- Allow the cake to cool in the pan for about 10 minutes before removing the sides. Let it cool completely on a wire rack before serving.
