Learn how to make delicious Jamie Oliver Apple Pie Cake Recipe. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 3 large apples, peeled, cored, and thinly sliced
  • Optional: 1/4 cup chopped walnuts or pecans

Feel free to swap out the buttermilk with a mixture of milk and a tablespoon of lemon juice if needed. For a nut-free version, simply omit the walnuts or pecans.

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a large bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together the melted butter, eggs, vanilla extract, and buttermilk until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  5. Gently fold in the apple slices and optional nuts, if using. My abuela always said the secret to a good cake is a gentle hand.
  6. Pour the batter into the prepared pan, spreading it evenly with a spatula.
  7. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. The top should be golden brown, and the kitchen will smell like a warm hug.
  8. Allow the cake to cool in the pan for about 10 minutes before removing the sides. Let it cool completely on a wire rack before serving.
