Ingredients
- 1 cup mozzarella cheese, shredded
- 1 cup cheddar cheese, shredded
- 2 ounces cream cheese, softened
- 1 large egg
- 1/2 cup almond flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 24 slices pepperoni
If you’re out of almond flour, coconut flour is a great substitute, but remember to adjust the quantity as it absorbs moisture differently. The creaminess of the cheeses reminds me of the rich, creamy pastas I love to whip up on weeknights, offering a similar luscious texture in a low-carb form.
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper. This will prevent sticking and make cleanup a breeze.
- In a microwave-safe bowl, combine mozzarella cheese, cheddar cheese, and cream cheese. Microwave in 20-second intervals, stirring in between, until the cheese is melted and smooth.
- Add the egg, almond flour, garlic powder, and Italian seasoning to the melted cheese mixture. Stir to form a dough. This step is reminiscent of watching my abuela mix dough, where patience and care make all the difference.
- Let the dough cool slightly, then divide it into 12 equal portions. Roll each portion into a ball and flatten into small discs.
- Place two slices of pepperoni on each disc and roll them up tightly. Secure with a toothpick if necessary.
- Arrange the roll-ups on the prepared baking sheet and bake for 12-15 minutes, or until golden brown and crispy. The aroma will remind you of pizza nights, filling your home with warmth and anticipation.
