Ingredients
- 1 package of King’s Hawaiian Sweet Rolls (12 rolls)
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 tablespoon lemon juice
- 1 cup mixed berries (blueberries, raspberries, strawberries)
- 1 tablespoon powdered sugar (for dusting, optional)
If you prefer a different fruit topping, feel free to substitute with your favorites. My abuela always encouraged substituting ingredients based on what’s available, which adds a personal touch to every dish.
Instructions
- Preheat your oven to 350°F. Line a baking sheet with parchment paper.
- In a medium bowl, beat the softened cream cheese until smooth. Add the sugar, vanilla extract, egg, and lemon juice, and mix until well combined.
- Separate the King’s Hawaiian rolls, and place them on the prepared baking sheet. Using the back of a spoon, press down in the center of each roll to create a small well.
- Spoon a generous tablespoon of the cream cheese mixture into the well of each roll.
- Top the cream cheese filling with a few mixed berries. I love using a mix of berries for color and flavor, but you can choose your favorite.
- Bake in the preheated oven for 15-20 minutes, or until the rolls are golden brown and the cheesecake filling is set.
- Remove from the oven and let cool slightly. Dust with powdered sugar before serving, if desired.
Remember, as my abuela would say, “Cooking is about feeling, not just following.” Trust your instincts, and don’t be afraid to make adjustments as you go along.
