Ingredients
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 egg
- 1/4 cup green onions, finely chopped
- 1 teaspoon Korean red pepper flakes (gochugaru)
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 2 tablespoons Sriracha sauce
- 1 teaspoon lime juice
If you’re missing an ingredient or two, worry not. Ground turkey can substitute the beef for a lighter version. No gochugaru on hand? A pinch of cayenne pepper or red chili flakes will do the trick.
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the ground beef, breadcrumbs, soy sauce, sesame oil, honey, garlic, ginger, egg, green onions, gochugaru, salt, and pepper. Mix until the ingredients are just combined, taking care not to overwork the meat.
- Using your hands, form the mixture into 1-inch meatballs and place them on the prepared baking sheet.
- Bake the meatballs in the preheated oven for 15-20 minutes or until they’re cooked through and have a lovely golden-brown exterior.
- While the meatballs are baking, prepare the spicy mayo. In a small bowl, whisk together the mayonnaise, Sriracha, and lime juice until smooth.
- Once the meatballs are done, remove them from the oven and let them cool slightly before serving.
- Serve the meatballs drizzled with the spicy mayo or with the sauce on the side for dipping.
For a little extra flair, sprinkle some sesame seeds and chopped green onions over the top before serving. It’s those small touches that remind me of my mother’s knack for making every dish feel special.
