Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 8 cups chicken broth
  • 1 cup orzo pasta
  • 2 cups cooked chicken, shredded (rotisserie chicken works great!)
  • 2 lemons, juiced and zested
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic, cooking for another minute until fragrant.
  2. Add the sliced carrots and celery to the pot, sautéing for 5-7 minutes until they begin to soften.
  3. Pour in the chicken broth and bring the mixture to a boil. Stir in the orzo pasta and reduce the heat to a simmer. Cook for about 8-10 minutes until the orzo is tender.
  4. Add the shredded chicken, lemon juice, lemon zest, and dried thyme. Season with salt and pepper to taste. Simmer for an additional 5 minutes to heat through.
  5. Remove the pot from the heat and let the soup sit for a couple of minutes to allow the flavors to meld together.
  6. Garnish with freshly chopped parsley before serving.
