Ingredients
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
2 carrots, peeled and sliced
2 stalks celery, sliced
8 cups chicken broth
1 cup orzo pasta
2 cups cooked chicken, shredded (rotisserie chicken works great!)
2 lemons, juiced and zested
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Instructions
Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic, cooking for another minute until fragrant.
Add the sliced carrots and celery to the pot, sautéing for 5-7 minutes until they begin to soften.
Pour in the chicken broth and bring the mixture to a boil. Stir in the orzo pasta and reduce the heat to a simmer. Cook for about 8-10 minutes until the orzo is tender.
Add the shredded chicken, lemon juice, lemon zest, and dried thyme. Season with salt and pepper to taste. Simmer for an additional 5 minutes to heat through.
Remove the pot from the heat and let the soup sit for a couple of minutes to allow the flavors to meld together.
Garnish with freshly chopped parsley before serving.
