Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 cup milk (whole or 2% work best)
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons lemon zest (from about 2 lemons)
- 1/3 cup freshly squeezed lemon juice
- 1 teaspoon baking powder
Feel free to substitute the all-purpose flour with a gluten-free blend if needed, and for a twist, try adding a hint of almond extract for a nutty undertone.
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or non-stick spray.
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Stir in the milk and vanilla extract until a smooth batter forms.
- Pour the melted butter into the prepared baking dish, followed by the batter. Do not stir.
- In a separate bowl, mix the lemon zest and lemon juice. Drizzle this lemon mixture evenly over the batter.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let the cobbler cool for a few minutes before serving. Enjoy the delightful aroma that fills your kitchen!
As my Abuela used to say, “Cooking is about trusting your senses.” Look for that golden crust and the delightful citrus scent wafting through your home.
