Ingredients
- 8 ounces of rotini pasta
- 1 cup of cherry tomatoes, halved
- 1 cup of corn kernels (fresh or frozen)
- 1/2 cup of red onion, finely diced
- 1 cup of shredded cheddar cheese
- 1/2 cup of cooked bacon, crumbled
- 1 cup of ranch dressing
- 1/4 cup of fresh cilantro, chopped
- 1 teaspoon of garlic powder
- Salt and pepper to taste
Feel free to substitute ingredients based on what you have on hand. For a vegetarian version, you can skip the bacon and add in black beans for extra protein and texture.
Instructions
- Start by cooking the rotini pasta according to the package instructions. Make sure to salt the water generously to impart flavor to the pasta. Once cooked, drain and rinse under cold water to stop the cooking process and cool the pasta.
- In a large mixing bowl, combine the cooled pasta, cherry tomatoes, corn, red onion, shredded cheddar cheese, and crumbled bacon. Toss gently to mix the ingredients evenly.
- Pour in the ranch dressing and sprinkle the garlic powder over the salad. Toss everything together until the ingredients are well-coated with the dressing.
- Add salt and pepper to taste, keeping in mind that the bacon and cheese add a natural saltiness.
- Sprinkle the chopped cilantro over the top for a fresh, herby finish. Mix once more before serving.
My tip for this step is to let the salad sit for about 30 minutes in the refrigerator before serving. This resting time allows the flavors to meld beautifully, making each bite more delightful than the last.
