8 ounces cooked lobster meat, chopped
4 slices of sourdough bread
4 tablespoons unsalted butter, softened
1 cup shredded cheddar cheese
1/2 cup shredded Gruyère cheese
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
1 teaspoon lemon juice
Salt and pepper to taste
Optional: 1 tablespoon chopped fresh chives for garnish
Instructions
Begin by combining the chopped lobster meat, mayonnaise, Dijon mustard, lemon juice, salt, and pepper in a medium bowl. Stir until the lobster is evenly coated.
Preheat a large skillet over medium heat.
Generously butter one side of each slice of sourdough bread, ensuring full coverage for that golden, crispy finish.
Place two slices of bread, buttered side down, into the skillet. Layer each slice with half of the shredded cheddar cheese, followed by the lobster mixture, and then the Gruyère cheese.
