Learn how to make delicious Lobster Scampi with Linguine. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

The beauty of this dish lies in its simplicity. Each ingredient plays a vital role in creating a harmonious symphony of flavors. Here’s what you’ll need:

  • 12 ounces of linguine
  • 1 1/2 pounds of lobster tails, shelled and cut into bite-sized pieces
  • 4 tablespoons of unsalted butter
  • 3 cloves of garlic, minced
  • 1/2 cup of dry white wine (like Sauvignon Blanc)
  • 1/4 cup of freshly squeezed lemon juice
  • 1/4 teaspoon of red pepper flakes
  • 1/2 cup of freshly grated Parmesan cheese
  • 1/4 cup of chopped fresh parsley
  • Salt and freshly ground black pepper, to taste
  • Optional: A splash of heavy cream for a richer sauce

If lobster is not available, shrimp makes an excellent substitute. This flexibility allows you to adapt the dish to your pantry and preferences, much like my family did when experimenting with new flavors.

Instructions

Creating this dish is as straightforward as it is rewarding. Follow these steps to bring a taste of luxury to your table:

  1. Begin by cooking the linguine in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the lobster pieces to the skillet and cook for 3-4 minutes, until they turn opaque and are just cooked through. Remove the lobster from the skillet and set aside.
  4. To the same skillet, add the remaining butter, white wine, lemon juice, and red pepper flakes. Allow the mixture to simmer for 2-3 minutes, reducing slightly.
  5. Return the lobster to the skillet, along with the cooked linguine. Toss everything together until the pasta is well-coated in the sauce.
  6. If desired, add a splash of heavy cream for a richer texture, stirring gently to combine.
  7. Season with salt and freshly ground black pepper to taste.
  8. Remove from heat and stir in the Parmesan cheese and parsley, reserving a bit for garnish.
  9. Serve immediately, garnished with additional Parmesan and parsley if desired.
