Learn how to make delicious Mango Chicken Rice Bowls. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 2 cups of jasmine or basmati rice
  • 1 pound of chicken breast, cut into bite-sized pieces
  • 2 ripe mangoes, peeled and diced
  • 1 tablespoon of olive oil
  • 2 tablespoons of soy sauce
  • 1 tablespoon of honey
  • 1 teaspoon of grated ginger
  • 1 garlic clove, minced
  • 1 lime, juiced
  • 1/4 cup of chopped cilantro
  • Salt and pepper to taste
  • Optional: Sliced avocado and chopped red onion for garnish

Instructions

  1. Start by cooking the rice according to the package instructions. I love using jasmine rice for its fragrant aroma and fluffy texture. Once cooked, set aside and keep warm.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until the chicken is golden brown and cooked through, about 8-10 minutes.
  3. While the chicken is cooking, prepare the sauce. In a small bowl, mix together the soy sauce, honey, grated ginger, minced garlic, and lime juice. Stir until well combined.
  4. Once the chicken is cooked, pour the sauce over the chicken in the skillet. Stir to coat the chicken evenly and let it simmer for 2-3 minutes until the sauce thickens slightly.
  5. Add the diced mangoes to the skillet and stir gently to combine. Cook for an additional 2 minutes to allow the flavors to meld together.
  6. To serve, divide the rice into bowls. Top each bowl with the mango chicken mixture. Garnish with chopped cilantro, and if desired, add slices of avocado and chopped red onion.
  7. Serve immediately and enjoy the vibrant flavors of this dish. Remember, cooking is about experimenting, so feel free to adjust the ingredients to suit your taste.
