1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 cup fresh mango puree (substitute with canned if fresh isn’t available)
1/2 cup fresh strawberry puree
1/2 cup whole milk
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened (for frosting)
3 cups powdered sugar (for frosting)
1 tablespoon fresh lemon juice (for frosting)
Fresh mango slices and strawberries for garnish
Instructions
Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
In a large bowl, cream together the butter and sugar until light and fluffy, about 3 minutes. This step is crucial for that perfect cupcake texture, just like my abuela taught me.
Add the eggs one at a time, beating well after each addition, and then mix in the vanilla extract.
