1 pound Brussels sprouts, trimmed and halved
4 slices of bacon, chopped
2 tablespoons olive oil
1/4 cup pure maple syrup
1 tablespoon balsamic vinegar
Salt and pepper to taste
Optional: 1/4 teaspoon red pepper flakes for a spicy kick
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until evenly coated.
Spread the Brussels sprouts in a single layer on the prepared baking sheet. Sprinkle the chopped bacon evenly over the top.
Roast in the preheated oven for 20-25 minutes, or until the Brussels sprouts are tender and the edges are caramelized. The bacon should be crisp and golden.
