Ingredients
- 1 pound of carrots, peeled and cut into sticks
- 4 slices of bacon, chopped
- 2 tablespoons maple syrup
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh thyme leaves (optional)
Feel free to substitute the olive oil with avocado oil for a slightly different flavor profile. If you’re looking to make it vegetarian, you can omit the bacon and add a sprinkle of smoked paprika to mimic the savory depth.
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss the carrot sticks with olive oil, salt, and pepper. Spread them out on the prepared baking sheet.
- Scatter the chopped bacon pieces over the carrots. Roast in the preheated oven for 20 minutes, or until the carrots start to soften and the bacon begins to crisp.
- Remove the baking sheet from the oven and drizzle the maple syrup over the carrots and bacon. Toss everything gently to ensure an even coat.
- Return to the oven for an additional 10 minutes, or until the carrots are caramelized and tender.
- If using, sprinkle fresh thyme leaves over the finished dish before serving.
This recipe is straightforward, but don’t rush it. Take a moment to allow the bacon to release its oils and flavors, which meld beautifully with the sweet carrots and maple syrup.
