Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- In a large bowl, toss the Brussels sprouts and butternut squash with 2 tablespoons of olive oil, salt, and pepper until well coated. Spread them out in an even layer on the prepared baking sheet.
- Roast the vegetables in the preheated oven for 20 minutes. Remove from the oven, drizzle with maple syrup, and gently toss. Return to the oven and roast for an additional 10-15 minutes, or until the vegetables are tender and caramelized.
- While the vegetables are roasting, prepare the dressing by whisking together the balsamic vinegar, Dijon mustard, minced garlic, and remaining tablespoon of olive oil in a small bowl. Set aside.
- In a dry skillet over medium heat, toast the pecans for about 3-4 minutes until fragrant. Be careful not to burn them!
- Once the vegetables are done roasting, let them cool slightly before transferring to a serving bowl. Add the toasted pecans, dried cranberries, and crumbled feta cheese.
