Learn how to make delicious Maple Pecan Pumpkin Cheesecake Cups. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup finely chopped pecans
  • 1/4 cup unsalted butter, melted
  • 1/4 cup maple syrup
  • 8 oz cream cheese, softened
  • 1/2 cup canned pumpkin puree
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 2 large eggs
  • Additional pecan halves for topping (optional)

If you find yourself out of pumpkin pie spice, a quick mix of cinnamon, nutmeg, and a pinch of clove will do the trick. And if maple syrup isn’t readily available, honey can serve as an alternative, lending a slightly floral sweetness.

Instructions

  1. Preheat your oven to 325°F. Line a muffin tin with paper liners for easy removal.
  2. In a medium bowl, combine the graham cracker crumbs, chopped pecans, and melted butter. Mix until the crumbs are moistened, then divide evenly among the muffin cups, pressing down firmly to create a crust.
  3. Bake the crusts for 5 minutes, then remove from the oven and set aside to cool slightly.
  4. In a large mixing bowl, beat the cream cheese until smooth and creamy. Add the pumpkin puree, granulated sugar, vanilla extract, pumpkin pie spice, and maple syrup. Beat until well combined.
  5. Add the eggs, one at a time, beating on low speed just until combined. Avoid overmixing to prevent too much air from getting into the batter.
  6. Pour the cheesecake mixture over the prepared crusts, filling each cup about three-quarters full.
  7. Bake for 18-20 minutes, or until the centers are set and slightly jiggle when gently shaken. Remember, like my abuela always said, a little jiggle means they’re just right.
  8. Allow the cheesecake cups to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely. Refrigerate for at least 2 hours before serving.
  9. If desired, top each cheesecake cup with a pecan half before serving for an extra touch of elegance.

These steps are straightforward and forgiving, much like those kitchen adventures with my family where creativity and adaptation were part of the fun!
