  • 1/2 cup breadcrumbs (use gluten-free if needed)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups broccoli florets
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 cup cooked quinoa or rice, for serving
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.

  6. While the meatballs and veggies are cooking, prepare your quinoa or rice according to package instructions.
  7. Once everything is cooked, assemble your bowls by placing a serving of quinoa or rice at the base, topped with meatballs and roasted vegetables.
