Ingredients

Here’s what you’ll need to create this flavorful dish:

  • 1 pound ground lamb (or beef as a substitute)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional for heat)
  • 1 tablespoon olive oil
  • 4 whole wheat pitas
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh mint (for sauce)
  • Salt and pepper to taste (for sauce)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground lamb, chopped onion, garlic, parsley, mint, cumin, coriander, salt, black pepper, and red pepper flakes. Mix until well combined.
  3. Shape the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
  4. Drizzle the meatballs with olive oil and bake for 20-25 minutes, or until they are browned and cooked through.
  5. While the meatballs are baking, prepare the mint yogurt sauce. In a small bowl, mix the Greek yogurt, lemon juice, chopped mint, and a pinch of salt and pepper. Adjust seasoning to taste.
  6. Once the meatballs are done, slice the pitas in half and gently open them to create pockets.
  7. Fill each pita half with a handful of mixed greens, a few slices of cucumber, and cherry tomatoes.
  8. Add a couple of meatballs to each pita, then drizzle generously with the mint yogurt sauce.
  9. Serve immediately and enjoy the vibrant flavors!
