- 1 pound ground lamb (or beef as a substitute)
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 tablespoon chopped fresh mint
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional for heat)
- 1 tablespoon olive oil
- 4 whole wheat pitas
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, thinly sliced
- 1/2 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh mint (for sauce)

Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the ground lamb, chopped onion, garlic, parsley, mint, cumin, coriander, salt, black pepper, and red pepper flakes. Mix until well combined.
- Shape the mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
- Drizzle the meatballs with olive oil and bake for 20-25 minutes, or until they are browned and cooked through.
- While the meatballs are baking, prepare the mint yogurt sauce. In a small bowl, mix the Greek yogurt, lemon juice, chopped mint, and a pinch of salt and pepper. Adjust seasoning to taste.
- Once the meatballs are done, slice the pitas in half and gently open them to create pockets.
- Fill each pita half with a handful of mixed greens, a few slices of cucumber, and cherry tomatoes.
- Add a couple of meatballs to each pita, then drizzle generously with the mint yogurt sauce.
- Serve immediately and enjoy the vibrant flavors!
