1 pound large shrimp, peeled and deveined
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon ground cumin
Salt and pepper to taste
2 cups cooked quinoa or couscous
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1/4 cup Kalamata olives, pitted and sliced
1/4 cup feta cheese, crumbled
1 lemon, juiced
2 tablespoons fresh parsley, chopped
Optional: substitute quinoa with brown rice or bulgur for a different texture
Instructions
Start by marinating the shrimp. In a large bowl, combine the olive oil, smoked paprika, cumin, salt, and pepper. Add the shrimp and toss until they are well coated. Let them marinate for about 15 minutes.
While the shrimp is marinating, cook your quinoa or couscous according to the package instructions. Once cooked, fluff with a fork and set aside.
Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side, or until they are pink and opaque. Be careful not to overcook, as shrimp can become rubbery.
In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, olives, and feta cheese. Drizzle with fresh lemon juice and toss gently to combine.
Divide the quinoa mixture into serving bowls and top with the cooked shrimp. Garnish with fresh parsley for an extra pop of color and flavor.
