Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil

  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 slices of cheddar cheese
  • 4 sandwich rolls
  • 1/2 cup shredded lettuce
  • 1 medium tomato, sliced
  • 1/4 cup mayonnaise
  • 1 tablespoon hot sauce (optional)

Feel free to substitute ground chicken or turkey for a lighter option, and use any type of cheese you prefer. The flexibility in ingredients reflects my family’s approach to cooking: use what you have and make it delicious.

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, cooking until they start to soften, about 5 minutes.
  2. Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned, about 8-10 minutes.
  3. Stir in the garlic powder, ground cumin, smoked paprika, chili powder, salt, and pepper. Mix well and let the spices infuse the beef for another 3-4 minutes.
  4. Lay the slices of cheddar cheese over the beef mixture. Allow the cheese to melt into the meat, about 2-3 minutes. Stir to combine, ensuring the cheese is evenly distributed.
  5. While the cheese is melting, toast the sandwich rolls lightly to give them a slight crunch.
  6. In a small bowl, mix the mayonnaise with the hot sauce (if using) to create a spicy mayo spread.
  7. Assemble the sandwiches by spreading the spicy mayo on each roll. Add the chopped cheese mixture, followed by shredded lettuce and sliced tomatoes.
