Learn how to make delicious Mexican Orange Chipotle Chicken. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh orange juice
  • Zest of 1 orange
  • 2 tablespoons olive oil
  • 3 chipotle peppers in adobo sauce, chopped
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

If you prefer a milder dish, you can reduce the number of chipotle peppers or remove the seeds. For a vegetarian twist, try substituting the chicken with firm tofu or jackfruit.

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the orange juice, orange zest, olive oil, chipotle peppers, honey, garlic, cumin, salt, and pepper. Whisk until well blended.
  3. Place the chicken breasts in a shallow dish and pour half of the marinade over them. Reserve the other half for later. Cover and refrigerate for at least 30 minutes, allowing the flavors to meld.
  4. Heat a large oven-safe skillet over medium-high heat. Add a drizzle of olive oil and sear the chicken breasts for 3-4 minutes on each side until golden brown.
  5. Pour the reserved marinade over the chicken, then transfer the skillet to the preheated oven.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. Remove the skillet from the oven and let the chicken rest for a few minutes before serving.
  8. Garnish with fresh cilantro if desired, and serve warm.

I’ve found that marinating the chicken for an extended period really enhances the flavors, so if you have the time, consider letting it sit overnight.
