Ingredients
Here’s what you’ll need to bring these mini tacos to life:
- 8 mini waffles (store-bought or homemade)
- 4 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 breakfast sausage links, cooked and chopped
- 1/2 cup shredded cheddar cheese
- 2 tablespoons chopped fresh cilantro
- 1/4 cup salsa (optional)
- 1 tablespoon butter
If you want a spicier kick, consider adding a dash of hot sauce to the eggs or swapping out the cheddar for pepper jack cheese. And for a vegetarian version, swap the sausage for sautéed mushrooms or peppers.
Instructions
- Start by preheating your waffle iron if you’re making homemade mini waffles. Otherwise, toast your store-bought mini waffles until they’re golden and crisp.
- In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Heat a non-stick skillet over medium heat and add the butter. Once melted, pour in the egg mixture. Cook, stirring constantly, until the eggs are just set, about 3 to 4 minutes.
- Remove the skillet from the heat and gently stir in the chopped sausage and half of the shredded cheese.
- To assemble the tacos, gently fold each mini waffle in half, creating a taco shell. Fill each shell with the scrambled egg mixture.
- Top with the remaining cheese, a sprinkle of cilantro, and a spoonful of salsa if desired.
- Serve immediately and enjoy the delightful blend of flavors and textures.
