Ingredients

  • 1 cup all-purpose flour

  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 pound breakfast sausage
  • 4 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1/4 cup shredded cheddar cheese
  • Fresh cilantro for garnish
  • Salsa or hot sauce for serving

If you’re out of buttermilk, don’t worry! A quick substitute is to mix 1 cup of milk with 1 tablespoon of lemon juice or white vinegar and let it sit for 5 minutes. It works like a charm!

Instructions

  1. Preheat your waffle iron. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, mix the buttermilk, egg, and melted butter until combined.
  2. Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix; lumps are okay.
  3. Cook the waffles according to your waffle iron’s instructions until golden brown and crispy. Set aside.
  4. In a skillet over medium heat, cook the sausage until browned and cooked through. Remove and set aside.
  5. In the same skillet, whisk together the eggs, milk, salt, and pepper. Cook the eggs, stirring gently, until just set. Remove from heat and mix in the cooked sausage.
  6. Cut the waffles into quarters to create mini taco shells. Fill each with the sausage and egg mixture, topping with shredded cheddar cheese.
  7. Garnish with fresh cilantro and serve with salsa or hot sauce on the side.
