- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1/2 pound breakfast sausage
- 4 large eggs
- 1/4 cup milk
- Salt and pepper to taste
- 1/4 cup shredded cheddar cheese
- Fresh cilantro for garnish
- Salsa or hot sauce for serving
If you’re out of buttermilk, don’t worry! A quick substitute is to mix 1 cup of milk with 1 tablespoon of lemon juice or white vinegar and let it sit for 5 minutes. It works like a charm!
Instructions
- Preheat your waffle iron. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, mix the buttermilk, egg, and melted butter until combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix; lumps are okay.
- Cook the waffles according to your waffle iron’s instructions until golden brown and crispy. Set aside.
- In a skillet over medium heat, cook the sausage until browned and cooked through. Remove and set aside.
- In the same skillet, whisk together the eggs, milk, salt, and pepper. Cook the eggs, stirring gently, until just set. Remove from heat and mix in the cooked sausage.
- Cut the waffles into quarters to create mini taco shells. Fill each with the sausage and egg mixture, topping with shredded cheddar cheese.
- Garnish with fresh cilantro and serve with salsa or hot sauce on the side.
