Instructions
- Start by gently rinsing the raspberries under cold water, then pat them dry with a paper towel. Set them aside.
- In a large mixing bowl, combine the mascarpone cheese, granulated sugar, and vanilla extract. Beat with an electric mixer until smooth and creamy, about 2-3 minutes.
- In a separate bowl, whisk the heavy cream until soft peaks form. Gradually add the powdered sugar, continuing to whisk until stiff peaks form, approximately 4-5 minutes.
- Fold the whipped cream gently into the mascarpone mixture, being careful not to deflate the cream.
- Add the lemon juice to the mixture and gently fold in half of the fresh raspberries.
- Spoon the mousse into serving glasses, layering with the remaining raspberries. Refrigerate for at least 2 hours to allow the flavors to meld together.
