Ingredients
Gather these ingredients to create your very own No Bake Chocolate Biscoff Cups. I’ve included a few suggestions for substitutions, just in case:
- 1 cup Biscoff cookie crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup powdered sugar
- 1 cup creamy Biscoff spread
- 1 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
- Pinch of sea salt
If you can’t find Biscoff cookies, graham crackers can be a good substitute. Similarly, if you’re out of Biscoff spread, peanut butter or almond butter can offer a different, but equally delicious, twist.
Instructions
Follow these steps to whip up your No Bake Chocolate Biscoff Cups:
- In a mixing bowl, combine the Biscoff cookie crumbs, melted butter, and powdered sugar. Stir until well combined.
- Press the crumb mixture into the bottom of each cup or mold, creating an even layer. I find that using the back of a spoon works best for pressing.
- In a separate bowl, combine the Biscoff spread with a pinch of sea salt and mix until smooth. Spoon this mixture over the crumb base, filling each cup about halfway.
- Melt the chocolate chips in a heatproof bowl over simmering water or in the microwave. Once melted, stir in the heavy cream until the mixture is smooth and glossy.
- Pour the chocolate mixture over the Biscoff layer in each cup, smoothing the tops with a spatula.
- Refrigerate the cups for at least 2 hours, or until set. This is a great time to relax with a good book or catch up on your favorite show.
- Once set, remove from the fridge and let them sit at room temperature for about 10 minutes before serving.
These cups are a testament to my belief that the simplest recipes often bring the most joy. They remind me of afternoons spent in my grandmother’s kitchen, where the aroma of fresh treats filled the air.
