- 20 Oreo cookies, crushed
- 1/4 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1/2 cup semi-sweet chocolate chips, melted
- Additional crushed Oreos for garnish (optional)
If you’re out of cream cheese, mascarpone can be a luxurious substitute. For a dairy-free version, use coconut cream instead of heavy whipping cream.
Instructions
- Start by making the Oreo crust. In a medium bowl, combine the crushed Oreo cookies with the melted butter. Mix until well combined, and then press the mixture into the bottom of your serving cups.
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add in the powdered sugar and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whip the heavy cream until stiff peaks form. This reminds me of the times I spent with my abuela, watching her effortlessly create magic with the simplest of ingredients.
- Gently fold the whipped cream into the cream cheese mixture, taking care not to deflate the cream. This step is key to achieving that light, airy texture.
- Melt the chocolate chips either in a microwave or using a double boiler. Once melted, gently fold the chocolate into the cream cheese mixture until well blended.
- Spoon the chocolate cheesecake mixture over the Oreo crust in each cup. Smooth the tops with a spatula and refrigerate for at least 2 hours to allow the cheesecake to set.
- Before serving, garnish with additional crushed Oreos if desired. This little touch adds a bit of crunch and visual appeal.
