Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups graham cracker crumbs
  • 2 cups powdered sugar
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil or vegetable oil

For a twist, you can substitute almond butter for peanut butter, or use dark chocolate chips for a more intense chocolate flavor. Feel free to experiment with what you have on hand!

Instructions

  1. Start by lining an 8×8-inch baking dish with parchment paper, leaving some overhang to easily lift the bars out later.
  2. In a large mixing bowl, combine the melted butter, peanut butter, and vanilla extract. Stir until the mixture is smooth and well combined.
  3. Add the graham cracker crumbs and powdered sugar to the peanut butter mixture. Mix thoroughly until all ingredients are well incorporated.
  4. Press the mixture evenly into the prepared baking dish, using the back of a spoon to smooth the surface.
  5. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth.
  6. Pour the melted chocolate over the peanut butter base, spreading it evenly with a spatula.
  7. Refrigerate the bars for at least 2 hours, or until the chocolate has set and the bars are firm.
  8. Once set, lift the bars out of the dish using the parchment overhang. Cut into squares and serve.
