Ingredients
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 cups graham cracker crumbs
- 2 cups powdered sugar
- 1 1/2 cups semi-sweet chocolate chips
- 1 tablespoon coconut oil or vegetable oil
For a twist, you can substitute almond butter for peanut butter, or use dark chocolate chips for a more intense chocolate flavor. Feel free to experiment with what you have on hand!
Instructions
- Start by lining an 8×8-inch baking dish with parchment paper, leaving some overhang to easily lift the bars out later.
- In a large mixing bowl, combine the melted butter, peanut butter, and vanilla extract. Stir until the mixture is smooth and well combined.
- Add the graham cracker crumbs and powdered sugar to the peanut butter mixture. Mix thoroughly until all ingredients are well incorporated.
- Press the mixture evenly into the prepared baking dish, using the back of a spoon to smooth the surface.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is completely melted and smooth.
- Pour the melted chocolate over the peanut butter base, spreading it evenly with a spatula.
- Refrigerate the bars for at least 2 hours, or until the chocolate has set and the bars are firm.
- Once set, lift the bars out of the dish using the parchment overhang. Cut into squares and serve.
