- 1 1/2 cups graham cracker crumbs

Instructions
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and press the mixture into the bottom of a 9-inch springform pan. Refrigerate for at least 30 minutes to set.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, beating until well combined.
- In a separate bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the cream cheese mixture gently to maintain its fluffiness.
- Stir in the fresh lemon juice and lemon zest until fully incorporated.
- Pour the cream cheese mixture over the chilled crust, smoothing the top with a spatula.
- Cover with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
- When ready to serve, run a knife around the edge of the springform pan before releasing the sides.
