Ingredients

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups orzo pasta
  • 3 cups beef broth (substitute with vegetable broth for a vegetarian twist)
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Dijon mustard
  • 1 tablespoon ketchup
  • 1 cup diced tomatoes (fresh or canned)
  • 1 teaspoon Worcestershire sauce
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent and the garlic is fragrant, about 2-3 minutes.
  2. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Stir in the Dijon mustard, ketchup, Worcestershire sauce, salt, and pepper, mixing until the beef is well coated with the sauces.
  4. Add the orzo pasta to the skillet, stirring to combine it with the beef mixture.
  5. Pour in the beef broth and add the diced tomatoes. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 10-12 minutes, stirring occasionally, until the orzo is tender and the liquid is mostly absorbed.
