Ingredients

  • 1 pound ground beef (or substitute with ground turkey for a lighter option)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 2 teaspoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 12 ounces penne pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, and 1 teaspoon of Cajun seasoning. Mix until just combined, making sure not to overwork the meat.
  2. Shape the mixture into small meatballs, about 1 inch in diameter, and set aside.
  3. Heat the olive oil in a large pot over medium heat. Add the meatballs, cooking until browned on all sides, about 5 minutes. Remove meatballs from the pot and set aside.
  4. In the same pot, add the onion, garlic, and red bell pepper. Sauté until the vegetables are softened, about 3-4 minutes.
  5. Stir in the remaining Cajun seasoning, smoked paprika, and cayenne pepper. Cook for another minute to release the spices’ aroma.
  6. Add the penne pasta and chicken broth to the pot. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 10-12 minutes, stirring occasionally, until the pasta is al dente.
  7. Return the meatballs to the pot. Pour in the heavy cream and add the cheddar cheese. Stir until the cheese is melted and the sauce is creamy.
  8. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
