Ingredients
4 salmon fillets (about 6 oz each)
1 cup orzo pasta
2 tablespoons olive oil
1 lemon, zested and juiced
2 cups chicken broth (can substitute with vegetable broth)
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup freshly chopped parsley
1/4 cup grated Parmesan cheese
Instructions
Heat the olive oil in a large skillet over medium heat. Season the salmon fillets with salt and pepper.
Add the salmon to the skillet, skin side down, and cook for 4-5 minutes on each side until golden brown and cooked through. Remove the salmon from the skillet and set aside.
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
Add the orzo to the skillet, stirring to coat in the remaining oil and garlic.
Pour in the chicken broth, lemon juice, and zest. Bring to a simmer and cook for about 10 minutes, stirring occasionally, until the orzo is al dente and the liquid is mostly absorbed.
Return the salmon to the skillet, nestling it into the orzo. Sprinkle with Parmesan cheese and parsley.
Cover and cook for an additional 2-3 minutes to let the flavors combine.
