1 pound ground beef or chicken
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper to taste
8 corn tortillas
2 cups shredded cheddar cheese
1 cup pico de gallo
1 avocado, sliced
Lime wedges for serving
Optional: 1 can of refried beans
Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a skillet over medium heat, add olive oil and sauté the onion until translucent, about 5 minutes.
Add the garlic and cook for another minute until fragrant.
Increase the heat to medium-high, then add the ground beef or chicken. Cook until browned, breaking it up with a spoon, about 7-10 minutes.
Stir in chili powder, cumin, paprika, salt, and pepper. Mix well to combine the flavors.
If using, spread a layer of refried beans on each tortilla. Then, spoon the meat mixture onto the tortillas and sprinkle generously with cheese.
Fold the tortillas in half and place them on the baking sheet. Bake in the oven for 10-12 minutes, or until the cheese is melted and the edges are crispy.
Remove from oven, carefully open the tacos, and add pico de gallo and avocado slices. Serve with lime wedges.
