1 celery stalk, diced

1 can (28 ounces) crushed tomatoes
2 tablespoons tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
1/2 cup whole milk
12 ounces pasta of your choice (like tagliatelle or spaghetti)
Freshly grated Parmesan cheese for serving
Instructions
In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery, and sauté until the vegetables are softened and fragrant, about 5 minutes.
Add the ground beef, breaking it apart with a spoon, and cook until browned, about 7-10 minutes. Drain excess fat if necessary.
Pour in the red wine, if using, and let it simmer for 2-3 minutes, allowing the alcohol to evaporate.
Stir in the crushed tomatoes, tomato paste, oregano, and basil. Season with salt and pepper to taste. Reduce the heat to low, cover, and let it simmer for at least 30 minutes, stirring occasionally.
