1 1/2 cups all-purpose flour
2 tablespoons granulated sugar
1/2 teaspoon salt
1/2 cup unsalted butter, chilled and cubed
1/4 cup ice water
4 cups fresh peaches, sliced
1/4 cup brown sugar
1 vanilla bean, seeds scraped
1 tablespoon cornstarch
1 tablespoon lemon juice
1 egg, beaten (for egg wash)
1 tablespoon turbinado sugar (optional, for sprinkling)
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, and salt. Add the chilled butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
Slowly add ice water, one tablespoon at a time, mixing until the dough just comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
Meanwhile, in another bowl, combine the peaches, brown sugar, vanilla bean seeds, cornstarch, and lemon juice. Toss gently to coat the peaches evenly.
On a floured surface, roll out the chilled dough to a 12-inch circle. Transfer to the prepared baking sheet.
Arrange the peach mixture in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the peaches, pleating as necessary to hold its shape.
Brush the crust with the beaten egg and sprinkle with turbinado sugar if desired.
Bake for 35-40 minutes, or until the crust is golden brown and the peaches are bubbling. Let cool slightly before serving.
