- 1 cup graham cracker crumbs
- 1/2 cup creamy peanut butter
- 1/4 cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened

- 1/2 cup semi-sweet chocolate chips
- 1/4 cup caramel sauce
- 1/4 cup heavy cream
- Pinch of salt
If you find yourself without graham crackers, digestive biscuits make an excellent substitute. Similarly, almond butter can replace peanut butter for a nuttier flavor profile.
Instructions
- Preheat your oven to 325°F. Line a 9×9-inch baking pan with parchment paper, allowing the edges to hang over for easy removal.
- In a medium bowl, combine graham cracker crumbs, peanut butter, and melted butter. Press the mixture evenly into the bottom of the prepared pan to form the crust.
- Beat the cream cheese and sugar together in a large bowl until smooth and creamy, about 2-3 minutes. Add the vanilla extract and eggs, one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the crust, spreading it evenly. Bake for 25-30 minutes, or until the cheesecake is just set and slightly jiggly in the center.
- While the cheesecake is baking, melt the chocolate chips and heavy cream together in a small saucepan over low heat, stirring until smooth. Set aside to cool slightly.
- Once the cheesecake is out of the oven, drizzle the caramel sauce over the top, followed by the chocolate ganache. Use a knife or skewer to gently swirl the toppings together.
- Let the cheesecake cool to room temperature, then refrigerate for at least 2 hours or until fully set.
- Lift the cheesecake out of the pan using the parchment paper edges and cut into bite-sized squares. Serve chilled and enjoy!
