Ingredients
- 1 cup shredded mozzarella cheese
- 1/2 cup sliced pepperoni
- 1/4 teaspoon dried oregano (optional, for a touch of herby flavor)
- 1/4 teaspoon red pepper flakes (optional, for an extra kick)
- Non-stick cooking spray
For a personal twist, you can substitute the mozzarella with cheddar or a cheese blend to suit your preference. The beauty of this recipe is its adaptability, much like the diverse flavors that filled my home as a child.
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with non-stick cooking spray.
- Arrange small mounds of shredded mozzarella cheese on the prepared baking sheet, leaving enough space between each for spreading.
- Top each cheese mound with a slice or two of pepperoni, pressing down gently. Sprinkle with oregano and red pepper flakes if using.
- Bake in the preheated oven for 5-7 minutes, or until the cheese is bubbly and the edges are golden brown. Keep a close eye to prevent burning.
- Remove from oven and let cool on the baking sheet for a few minutes to allow them to crisp up before serving.
One tip I’ve learned from experience: ensure your cheese mounds aren’t too thick, as this helps them crisp up beautifully. It’s a trick I picked up from watching my mom make her famous quesadillas, where achieving the perfect cheese melt was an art form.
