Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup shelled pistachios
  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup bittersweet chocolate chips
  • 2 tablespoons butter

For a gluten-free option, you can substitute the all-purpose flour with a gluten-free flour blend. If you’re looking to reduce the sugar, consider using a sugar substitute that suits your dietary needs.

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. In a medium saucepan, combine water and butter. Bring to a boil over medium heat.
  3. Add flour all at once and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
  4. Remove from heat and let cool for 5 minutes. Add eggs one at a time, beating well after each addition until the dough is smooth and glossy.
  5. Spoon the dough into a piping bag fitted with a large round tip. Pipe 4-inch long logs onto the prepared baking sheet.
  6. Bake for 15 minutes, then reduce the oven temperature to 375°F and bake for an additional 20 minutes or until golden brown.
  7. While the éclairs cool, prepare the pistachio filling by processing pistachios in a food processor until finely ground.
  8. In a bowl, whip heavy cream, sugar, and vanilla extract until soft peaks form. Fold in ground pistachios.
  9. For the chocolate glaze, melt chocolate chips and butter in a heatproof bowl set over a pot of simmering water. Stir until smooth.
  10. Once éclairs are cooled, cut each in half lengthwise and fill with pistachio cream using a piping bag.
  11. Dip the top of each éclair in the chocolate glaze, allowing excess to drip off.
  12. Let the glaze set for a few minutes before serving.
