Ingredients

  • 1 pound boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (15 ounces) pumpkin puree
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes with green chilies
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: 1/2 teaspoon cayenne pepper for extra heat
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
  2. In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes, stirring occasionally.
  3. Add the diced red bell pepper and continue to sauté for another 2 minutes, allowing the flavors to meld together.
  4. Stir in the pumpkin puree, black beans, diced tomatoes with green chilies, and chicken broth. Mix well to combine all ingredients.
  5. Return the browned chicken to the pot. Add chili powder, ground cumin, smoked paprika, salt, and pepper. If you like a bit of heat, add the optional cayenne pepper.
  6. Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for about 20-25 minutes. Stir occasionally, allowing the flavors to develop and the chili to thicken.
  7. Taste and adjust seasoning if necessary. Once the chili has reached your desired consistency, remove it from the heat.
  8. Garnish with fresh cilantro and serve with lime wedges on the side for an extra burst of flavor.
