Ingredients
- 1 cup pumpkin puree
- 1 cup graham cracker crumbs
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- Pinch of salt
- 8 oz white chocolate, melted
- Crushed pecans or graham cracker crumbs for topping (optional)
If you’re like me and enjoy a bit of experimentation, feel free to swap out the white chocolate for dark chocolate, or add a dash of cayenne for a spicy twist. You can also use gluten-free graham crackers if needed.
Instructions
- In a large mixing bowl, combine the pumpkin puree, softened cream cheese, and vanilla extract. Stir until the mixture is smooth and well combined.
- Add in the powdered sugar, graham cracker crumbs, cinnamon, ginger, nutmeg, cloves, and a pinch of salt. Mix until you have a dough-like consistency. If the mixture feels too soft, add a bit more graham cracker crumbs.
- Using a small cookie scoop or your hands, roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to firm up.
- Once the truffles have chilled, melt the white chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Dip each truffle into the melted white chocolate, ensuring they are completely coated. Place them back on the parchment paper.
- Before the chocolate hardens, sprinkle with crushed pecans or graham cracker crumbs for added texture.
- Refrigerate the truffles for another 15 minutes or until the chocolate is set.
Remember, the key to a beautiful truffle is patience. Allowing them to chill properly ensures that each bite is a perfect balance of flavors and textures.
