Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 cup fresh raspberries (or frozen, if out of season)
  • 2 tablespoons raspberry preserves (optional for extra flavor)

Instructions

  1. Preheat your oven to 325°F (165°C) and line a 9×9-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, combine the graham cracker crumbs, 1/4 cup of sugar, and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of the prepared pan to form the crust. Bake for 10 minutes, then set aside to cool.
  3. In a large mixing bowl, beat the softened cream cheese and 1/2 cup of sugar until smooth and creamy, about 2-3 minutes. Mix in the eggs one at a time, ensuring each is fully incorporated before adding the next.
  4. Add the vanilla extract and sour cream, blending until the mixture is smooth and creamy. Pour the cream cheese mixture over the cooled crust, spreading evenly.
  5. Gently place the raspberries on top of the cream cheese mixture. If desired, dot with raspberry preserves for a richer raspberry flavor.
  6. Bake in the preheated oven for 35-40 minutes, or until the center is set and the edges are lightly golden. Allow to cool to room temperature, then refrigerate for at least 3 hours or until fully chilled.
  7. Once chilled, lift the bars out of the pan using the parchment paper overhang and slice into squares. Enjoy the creamy, tangy delight!
