Ingredients

  • 1 loaf of crusty sourdough bread, sliced
  • 4 cloves of garlic, peeled
  • 2 tablespoons olive oil
  • 2 cups cherry tomatoes, halved
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 ball of burrata cheese
  • Fresh basil leaves, for garnish

Feel free to substitute the sourdough with any good-quality bread you have on hand. If burrata is hard to find, fresh mozzarella can be a good alternative.

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the garlic cloves on a small piece of foil, drizzle with 1 tablespoon of olive oil, and wrap tightly. Roast in the oven for about 20 minutes until golden and soft.
  3. Meanwhile, in a bowl, toss the cherry tomatoes with the remaining olive oil, balsamic vinegar, oregano, salt, and pepper. Spread them on the prepared baking sheet and roast for about 15 minutes until they start to caramelize.
  4. Slice the sourdough bread and lightly toast them in the oven for about 5 minutes until they are golden and crisp.
  5. Once the garlic is roasted, mash it into a paste and spread it over the toasted bread slices.
  6. Top each slice with roasted tomatoes and a generous piece of burrata. Return to the oven for 3-4 minutes, just to warm the burrata slightly.
  7. Garnish with fresh basil leaves before serving. Enjoy the toast warm, allowing the burrata to ooze over the tomatoes and garlic.
