Ingredients
- 1 pre-made pizza dough (or homemade, if you prefer)
- 2 heads of garlic
- 2 tablespoons olive oil
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried oregano
- Fresh basil leaves for garnish
If you’re feeling adventurous, you might want to toss in some toppings like caramelized onions or fresh arugula after baking. Remember, the magic of cooking is in following your senses, a precious lesson I learned while helping my abuela stir her pots.
Instructions
- Preheat your oven to 400°F (200°C). Place the heads of garlic on a piece of foil, drizzle with olive oil, and wrap them tightly. Roast in the oven for about 30-35 minutes, until the garlic is soft and caramelized.
- While the garlic is roasting, prepare your pizza dough by rolling it out on a floured surface to your desired thickness. Transfer it to a baking sheet or pizza stone.
- Once the garlic is done, squeeze the cloves out of their skins into a bowl. Mash them into a paste and mix with ricotta cheese, Parmesan cheese, salt, and pepper until well combined.
- Spread the garlic and cheese mixture evenly over the pizza dough, leaving a small border around the edges.
- Top with shredded mozzarella and sprinkle with dried oregano. Bake in the oven for 12-15 minutes or until the cheese is bubbly and the crust is golden brown.
- Remove from the oven and let cool for a couple of minutes. Garnish with fresh basil leaves before serving.
As you prepare this pizza, remember the joy of cooking comes from experimenting and making each dish your own. Just like my abuela, trust your senses as you go.
