Instructions
Follow these steps to create a meal that will delight your taste buds and impress your guests:
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish with a bit of olive oil.
- Using a sharp knife, carefully cut a pocket into each chicken breast, being sure not to cut all the way through.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
- In a mixing bowl, combine the cooked spinach, roasted red peppers, and shredded mozzarella. Stir until well mixed.
- Stuff each chicken breast with the spinach mixture, securing the opening with toothpicks to prevent the filling from spilling out.
- Brush the stuffed chicken breasts with the remaining olive oil and season with oregano, salt, and pepper.
