Learn how to make delicious Roasted Red Pepper Spinach Mozzarella Stuffed Chicken. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Gathering your ingredients ahead of time makes the cooking process smooth and enjoyable. Here’s what you’ll need:

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, sliced
  • 2 cups fresh spinach leaves
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Toothpicks (for securing the chicken)

If you can’t find fresh spinach, frozen spinach works just as well—just be sure to thaw and drain it thoroughly. For those who prefer a spicier kick, try adding a pinch of red pepper flakes to the filling.

Instructions

Follow these steps to create a meal that will delight your taste buds and impress your guests:

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with a bit of olive oil.
  2. Using a sharp knife, carefully cut a pocket into each chicken breast, being sure not to cut all the way through.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
  5. In a mixing bowl, combine the cooked spinach, roasted red peppers, and shredded mozzarella. Stir until well mixed.
  6. Stuff each chicken breast with the spinach mixture, securing the opening with toothpicks to prevent the filling from spilling out.
  7. Brush the stuffed chicken breasts with the remaining olive oil and season with oregano, salt, and pepper.
  8. Place the chicken in the prepared baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
  9. Once done, remove from the oven and let the chicken rest for a few minutes before serving.

From my experience, allowing the chicken to rest before slicing ensures that the juices redistribute, keeping the meat tender and moist.
