Ingredients
4 medium sweet potatoes, scrubbed and halved
2 tablespoons olive oil
1 teaspoon sea salt
1/2 teaspoon black pepper
1 cup ricotta cheese
1 tablespoon finely chopped fresh rosemary
1 tablespoon finely chopped fresh thyme
1 tablespoon lemon zest
1 tablespoon lemon juice
1/4 cup chopped fresh parsley
Optional: Red pepper flakes for a bit of heat
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Place the sweet potatoes on the baking sheet, cut side up. Drizzle with olive oil, then sprinkle with sea salt and black pepper.
Roast in the oven for 30-35 minutes, or until the sweet potatoes are tender and lightly caramelized around the edges.
While the sweet potatoes are roasting, prepare your herbed ricotta. In a medium bowl, combine the ricotta cheese, rosemary, thyme, lemon zest, lemon juice, and a pinch of salt. Stir until well blended.
Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Spoon generous dollops of herbed ricotta onto each sweet potato half.
Finish with a sprinkle of fresh parsley and, if you like a bit of spice, a pinch of red pepper flakes.
