Feel free to substitute Yukon Gold potatoes with red potatoes if you prefer a slightly sweeter flavor. If you’re out of fresh dill, dried dill works just fine, although the fresh variety adds a lovely vibrant touch.

- Preheat your oven to 375°F (190°C). This is crucial to ensure everything cooks evenly.
- In a large bowl, toss the sliced potatoes with olive oil, garlic powder, onion powder, salt, and pepper. Arrange them in a single layer in a baking dish.
- Bake the potatoes in the preheated oven for 25 minutes, or until they start to soften. This step is important because it ensures the potatoes are cooked through by the end.
- Remove the dish from the oven and place the salmon fillets on top of the potatoes. Season the salmon with a pinch of salt and pepper, and lay lemon slices over each fillet.
